Boil the brown rice for 20 minutes-22 minutes, along with a bay leaf and a little salt. Add in the last minutes of this, 1 clove of garlic.

2. Cut the breasts into small squares and sauté them with the peppers and onion. 3. Once the sofrito starts to toast, add the breast pieces and the quinoa (which was already made, they were leftovers from other meals) and the cold tomato if you prefer and let it cook and cottage cheese. 4. Once the rice is strained, add it together with the sofrito and stir it so that it takes flavor (add in this step, the Provencal herbs, the black pepper and the oregano). 5. Serve and eat! Easy and delicious.
