Mashed peas with mint

Put the peas to cook for 4 minutes. Once they get a bright green color, strain and set aside.

Chop the garlic very small and sauté it with the peas and a splash of EVOO for about a minute to get the garlic flavor. Set aside.

Put everything in a bowl or deep dish and mash with a fork or whatever is easiest for you (I used the pestle and mortar).

Add the rest of the ingredients and mix. Chopped mint. The butter is optional but it gives it a point. Lemon, salt and pepper to taste.
