Soak the dates in warm water for about 15 minutes. Then grind with a little of the water until a paste is formed.

Separate the egg whites from the egg yolks and whip the egg whites until stiff.

Mix in another bowl the egg yolks, date paste, Greek yogurt, orange juice and zest of the whole orange.

Combine the egg whites with the wet ingredients and mix with wrapping motions. Preheat the oven to 180°.

Sift the flour with the yeast and mix well. I added half of the bran remaining after sifting. Add a little cinnamon and mix again (optional). Transfer to a baking pan with parchment paper or greased with oil.

Put it in the oven at 180 heat up and down for about 25 minutes, then lower it to 150 approximately 20 more minutes. Pierce the center with a toothpick to check if it is done (if it is still not ready, put it back in and keep an eye on it). This will depend on each oven.
