First, dice the chicken breasts, season with salt and pepper and marinate in soy sauce for a couple of hours. Later, cut the eggplants in half and sear them on the inside (this will make it easier to remove the inner part later). Season with salt and pepper and add a little oil, and put them in the oven for about 20-25 minutes at 180°C.

Sauté the garlic, cut the onion and add it to the pan when the garlic is golden brown. Lower the heat so that it caramelizes a little at the same time that it is being cooked. When it is ready, add the diced tomato, and when it melts a little, add the chicken.

Take the eggplants out of the oven, empty them and add the inner part to the sauce. Add the fried tomato and stir.

Stuff the eggplant skins with the fried sauce, add diced feta cheese and a little grated cheese. Put them back in the oven for 5' and that's it!
