The pancetta and chorizo are optional. Grate the cauliflower or chop it with a food processor.

Fillet three garlics and put them in a frying pan with the olive oil.

Chop the peppers into medium pieces. Sauté them with the garlic, when they are to your liking remove them and set aside.

Sauté diced chorizo and bacon

When they are slightly done, add 3 crushed garlic cloves and in a couple of minutes add the grated cauliflower.

Leave the cauliflower for about three minutes. Add the paprika, I usually add a touch of spice. A couple of minutes more and you can add the reserved peppers, a few turns and you have it.

I sometimes add a grilled egg, but not this time, so no photo.
