Prepare a frying pan and a casserole dish both with a good splash of olive oil and chopped garlic, put on the heat and leave a few minutes for the oil to take flavor.

In one pour the mushrooms (natural) previously washed and cut and in the other the rice (in my case I used a cup) WITHOUT WATER, stir with oil being careful not to burn, after a few minutes add the water and salt.

Once the rice is done add it to the pan with the mushrooms that will already be done and stir over low heat without sticking, also add the parsley. After a few minutes for the rice to take the flavor of the mushrooms add a splash of oat drink / milk (whichever you prefer) stir and leave over low heat.

Once the oat/milk drink is almost consumed, grate the cheese of your choice and stir a little, then turn it off and continue stirring until it melts.
