First wash and cut the eggplant in half. Make lateral cuts with the knife, creating squares. Put a good splash of oil and a little salt. Microwave for approximately 15 minutes, depending on the size of the eggplant it is done earlier or later. Check that the pulp is soft.

Scoop out the pulp with a spoon and mix with tuna, a few spoonfuls of tomato, grated mozzarella and emmental, a pinch of pepper and oregano. Put your favorite cheese on top and bake under the broiler until the cheese is au gratin. You can use the microwave or the oven. Personally I think the gratin is much better in the oven but if we are in a hurry, the microwave is a good option.

Tips: -Choose large eggplants, since they shrink a lot in the microwave. -Drain the tuna well and do not add too much tomato so that they are not too watery. -Choose the filling you like the most and eat.
