Tacos / fajitas of plantain macho

They are made from MALE plantain. And tranquilxs, the male plantain is not sweet when it's green!!! 😊 ⠀ 🌱INGREDIENTS (for 2 tacos): ⠀ 🔸For the dough: - 1 plantain macho (⚠️tiene that must be of this variety and be very green ➡️ normal plantain/banana will not work). - 1 c/s of EVOO - Salt to taste

🌱 PROCEDURE. 1. We heat water in a pot. In the meantime, cut the plantain into rounds WITH THE PEEL. When the water is boiling, add the plantain and cook for 15-20'❗⚠️ if we cook it longer or add it before it boils, the dough will be very difficult to handle.

2. Drain the banana and cool it a little with cold water under the tap.

3. Peel the banana, put it in a food processor with the EVOO and salt. Blend.

4. We form 2 balls with our hands and place them on a baking paper so they don't stick together. 🔺If you have baked it too long and the dough is too sticky, grease your hands with EVOO to be able to handle it.

5. Put another baking paper on top (to avoid sticking) and flatten the balls (you can use a plate or a rolling pin).

6. We take them to a non-stick frying pan and cook them on both sides. ⠀

🔸I made the filling with: chicken, carrot, zucchini and red bell pepper sautéed with spices and a little avocado ⚠️⚠️ be careful if you follow a low FODMAPs diet. ⠀ 🔸For the sauce I use: 1 coconut vegetable yogurt, juice of half a lemon, 1 c/s EVOO, salt and Provencal herbs.
