Broccoli and red lentil cream soup

Cut the broccoli (including the stalk) and the leek roughly. Put in a pot to poach with a splash of EVOO and half a finger of water.

Bring to a boil adding water as it evaporates to make a "fumet" of the vegetables themselves. When they break down add the red lentils, curry, salt and fill with water just to cover the mixture. Boil until the lentils are cooked and blend. If it is too thick, you can add a little more water.

As a topping you can put slices of serrano ham, cheese...something salty that contrasts. Enjoy!
