Cut the eggplants into one centimeter slices, add a drizzle of oil, salt and pepper and put them in the oven at 180° for 15-20 minutes.

Put a dash of oil, garlic and onion in a frying pan, brown lightly and add the crushed tomato and spices to taste (oregano, basil, salt, pepper).

Remove the eggplants and assemble them with the mozzarella and the sauce. I put a mixture of cheeses on top, but it is optional.

Bake in the oven at 180° for 5 minutes or as long as it takes for the cheese to melt.
