Yogurt and almond sponge cake with orange and lemon

Preheat the oven and I take advantage of the heat to heat some water for the date paste (it is best done with slightly hot water). Wash the orange and lemon well and peel about 6 strips of each WITHOUT the white part!

Beat the eggs and add the yogurt. Add the oat and almond flour filling the yogurt glass to see the amounts of flour, 1 oat and 2 almond (if you do not have the flour you can grind oats and almonds normal and it is like this cake, with more lumps) and yeast and mix well.

By then the water will be warm and we can make the date paste by adding it to a blender with the dates and peels and the juice of half a lemon and half an orange. We beat well and add our dough to beat it and make it more fluid. For those who like it sweeter can add a teaspoon of honey or similar.

We put it in a baking pan and let it bake for 30-35 minutes without browning completely.

When it is ready, let it cool. The taste is quite reminiscent of the Santiago cake, if you want you can decorate it with a little grated coconut on top instead of powdered sugar and give it to the family 😜.
