Gnocchi salad with smoked salmon

Cook the gnocchi in salted water according to package directions, usually a couple of minutes, until they float.

Remove them from the heat, pour them into a colander and pour cold water over them so that they stop cooking.

In a bowl put the spinach, the chopped sea sticks and the salmon, all chopped in bite size pieces. Add the gnocchi and the grated cheese on top. Season with oil and salt.

For a fresh and spicy touch, I usually add a chopped chili pepper. You can also garnish with balsamic vinegar.
