Turn on the oven to preheat it to >180°. Take baking paper and wrap 3-4 sardines in packets with a little oil, salt and oregano. We close them like envelopes. When we have all the packages, we lower the oven temperature to 180° and we put them in the oven for 10 minutes. If your oven is not very powerful, leave it a couple of minutes more. Mine is not an air oven, in case it gives you a clue.

While the sardines are baking in the oven, cut 3 cloves of garlic into small squares and cook them in a frying pan with a couple of tablespoons of EVOO and salt. When they are golden brown (⚠️ if the pieces are too small they will burn immediately), add a teaspoon of dried parsley and stir, and then the breadcrumbs (or flour). Stir quickly so that it does not burn. If it is too dry, add a little more EVOO so that the mixture can be poured over the sardines.

Remove the pan from the heat and, we can leave it like this or, as I have done, we grind it in the mortar so that the garlic is in small pieces and the mixture is as homogeneous as possible.

Remove the sardines from the oven, unwrap them and pour over the mixture we have made in the pan, and that's it. Delicious. Let me know what you think.
