Chop the onion and two cloves of garlic to make a good sofrito. Pour it into the casserole together with EVOO.

At the same time that the sofrito is being made, we cut the octopus (previously cooked) and the mushrooms.

After 10 minutes, add a splash of white wine and when the alcohol has evaporated, add the paprika, saffron, tomato sauce, mushrooms and then the noodles. You can add the spices of your choice at this point.

Toast the noodles for a couple of minutes and add a glass of water. We let them cook at a happy temperature for 7 minutes (after 5 minutes we add the rosemary, parsley and octopus), or we can cook them for 4-5 minutes and finish in the oven at 200 degrees for 5 minutes.
