Vegetable and chicken couscous

First we cut the vegetables into small pieces. One onion, half a bell pepper of each color, one zucchini and two carrots.

Then we put it in a frying pan with two tablespoons of olive oil and fry it until it is poached.

Once the vegetables are poached, add the chicken, previously chopped and seasoned with salt and pepper, while it is cooking in the pan, add parsley and cumin and let it cook until golden brown.

While the chicken is browned we will put the two and a half glasses of vegetable broth in a saucepan and bring to a boil, when it starts to boil add the glass and a half of couscous and let it cook for 5 minutes. Once the couscous is ready, add the chicken and the vegetables and it is ready.
