Spinach and shrimp omelette sandwich

First, in a frying pan with a little oil, add the shrimp and spinach to cook (you can also add pine nuts or raisins).

When we see that the spinach and shrimp are cooked, in the same pan we add the beaten egg and make the omelet.

Once the tortilla is ready, we assemble the sandwich with the tortilla and some soft cheese. If you prefer, add a little hummus on the bread so that it is not so dry.

Finally, once our sandwich is assembled, we put it on the grill for about 5-10 minutes (depending on how toasted we like the bread).
