Avocado and poached egg toast

Put water to boil with a splash of vinegar in a small saucepan (I use one that only holds three eggs). Then toast the bread.

Break the egg into a small dish and season to taste.

When the water is boiling use the handle of a wooden cooking spoon (or similar utensil) to stir the water until a whirlpool forms.

Once the whirlpool is formed, quickly add the egg and lower the pan to low heat. Half cover and wait 3 mins.

After the time has elapsed, turn off the heat and remove the egg with a skimmer and place it on a small plate so that it finishes releasing water and cools.

When the bread is toasted, spread the tomato and add a little olive oil.

Cut half an avocado already peeled into slices (the other half can be kept in a tapper with water for next time) and put it on top of the bread. Add salt and pepper to taste. It is preferable to use a pepper grinder and grind it on the spot.

Once the avocado is on the bread, remove the leftover egg water and place it on top of the toast.

Now we have our avocado toast with poached egg. Be careful that it drips hahaha.
