Peel the garlic, onion and carrots in small pieces, put in a pan a little olive oil and add the garlic, Cayenne (grind before in the mortar) and ginger. When it is golden brown add the onion and a pinch of salt so that it "sweats", then add the carrot and sauté for about 4 minutes. After this we will add the cabbage and sauté for 10 minutes more, as an option if you do not like the pieces to be very large we pass it with the blender a little but without going too far to leave its natural texture. Then add the soy sauce, pepper (grind before in a mortar) and salt to taste, the filling is ready.

To make the momos (dough) pour the flour in a bowl and heat the water, pour it into the flour and begin to make the mixture (let stand 20-30 minutes covered with a cloth). When it is ready, we will make small balls and shape them so that they are round, on the edges we pour a little water with the tips of our fingers so that they seal when we close them. Fill them with the filling we have made before and start making folds in such a way that they are sealed. We will take a pot and silver paper that has the size to cover the upper part of this, we will make double folds with the silver paper and we will put it on top of the pot, we will make small holes in the paper so that when we fill the pot with water the steam function is done well, we will put the momos on top of the silver paper and we will put a lid on top (being careful that the momos do not slip into the pot because they would get wet) (the sauce will be uploaded in another publication).
