Preparation of the pizza dough: mix the yeast in warm water, add the flour and mix until a non-sticky dough is obtained. Then add a pinch of salt. Let it rest for at least 30 minutes. In the meantime, hydrate the dried tomato, leaving it for the same time in a bowl of water.

Mold into the shape of a pizza base. Preheat the oven to 180°.

Mix the grated tomato with the ricotta cheese and oil and spread the mixture on the base. Add the rehydrated tomatoes

Place in the oven. Before it is done, take out the pizza and sprinkle the arugula and add a ball of Burrata in the center, put it back in the oven for a few minutes.
