Cut the vegetables into thin strips and sauté in a frying pan with EVOO for 20 minutes. Stir constantly to prevent sticking. Salt to taste.

When the vegetables are ready, add the desired spices to the sirloin (I have added thyme, rosemary, salt and pepper) and place it on a sheet of cling film.

Open the sirloin in half and fill it with the base.

Roll up, while pressing well, in the plastic wrap.

Wrap everything in aluminum foil (so that none of the foil can be seen).

Bake in a preheated oven at 180°/200° for 30 minutes. When ready, allow to cool and remove the aluminum foil and cling film. As it will already be compact, return it to the baking dish. Put cheese on top and bake for 5 more minutes to gratinate.

Serve with a vegetable sauce (you have the recipe in my profile).
