Rice with vegetables and poached egg

We place two pots with water to boil, in one of them we put the egg to boil for 8 minutes. While in the other with a pinch of salt, a little EVOO and pepper, add the rice and let it boil.

Cut all the vegetables into small cubes and add them to a frying pan to cook them with a little EVOO and salt.

When they are almost cooked, add the tuna and leave it for a few more minutes.

Once the vegetables are cooked and the rice is boiled, remove it from the water and add it to the pan with the other ingredients and leave it for another few minutes until it is completely cooked.

Serve our rice on a plate, grate over it a little bit of Emmental cheese, or the one of your preference, and finally place the peeled egg on top.

Season and decorate with oregano and pepper to taste; AND ENJOY!☺️
