Season the quails with salt and pepper to taste and mark them in the pressure cooker with a drizzle of oil. Remove and set aside.

In the same oil we poach the onion and carrot. When they are poached, add the chicken broth and the quails, put the lid on the pot and when the lid goes up, leave for 10 minutes over medium heat.

After 10 minutes, remove the quails to the plate and whisk the sauce, when it is homogeneous, add it on top of the quails.
