I bought the veal and I have chopped it at the butcher's. Put it in a bowl and season with salt and pepper. Put it in a bowl and season with salt and pepper.

In a frying pan with olive oil, add onion and very chopped garlic, a pinch of salt and let it cook for 10 minutes over low heat.

Add the onion and garlic to the bowl with the meat and also add the chopped parsley and one egg. Stir well until everything is integrated.

Cover with plastic wrap and let stand in the refrigerator for at least two hours. You can make the mixture at night and it will be ready the next day.

Now just put parchment paper and go shaping our burgers. Better if you cut the paper to create individual units of parchment paper, and thus have each one separately. You will get about 4, depending on the size.

I recommend that you put another piece of parchment paper on top and keep them in the refrigerator for 1 hour so that they are well compacted.
