Boil the quinoa

Grind all the vegetables in a food processor until they are in small pieces (to the taste of the consumer, preferably that the lumps are noticeable). If you do not have a food processor, you can also chop them by hand.

Heat the oil in a frying pan and poach all the vegetables. Add salt and pepper to taste.

Let the vegetables cool and reserve the cooked quinoa.

When it has cooled, mix the vegetables, quinoa, one beaten egg and the chickpea flour.

Form the patties (they can also be in the form of croquettes or meatballs).
