Place the potatoes in a bowl with oil and salt and stir to soak.

In another bowl put two handfuls of bread crumbs, one tablespoon of each spice and mix it. Gluten-free breadcrumbs are available at Mercadona.

Coat the potatoes with the breadcrumbs and place on a tray with parchment paper.

Bake in the oven at 200° for 30 minutes.

Avocado mayonnaise: - one egg, a little oil, one ripe avocado in small cubes and salt.

Add chopped fresh parsley when you finish whisking the mayonnaise and stir slowly.

TIPS 1️⃣ Potatoes are best as small as agate or baby potatoes (although these are very small). 2️⃣ To avoid cutting the mayonnaise: place the egg yolk on the bottom and beat for 30 seconds without moving the mixer from the base of the bowl and gradually raise it after 30 seconds. 3️⃣ Place the potatoes with the skin side up and not in contact with the pan. So that they remain crispy skin
