Mix the dry ingredients on one side, except for the chocolate and chopped nuts.

Add the egg, coconut oil, vanilla essence or the inside of a vanilla pod and the crushed erythritol (as if it were powdered sugar).

Mix with the chocolate chips and walnuts and make a homogeneous mixture and refrigerate for 15 minutes.

Form two giant cookies of the same size or 4 slightly smaller ones (I made 4 of 44 gr each, more or less). And put them in the freezer for an hour.

Crush them slightly with the bottom of a glass or your hand and put them in the airfryer for 8 minutes or in the oven for 10 minutes. When you take them out, let them cool for 3-5 minutes and try to fill them with a metal nozzle (I tried to put the nozzle in a plastic bag so as not to stain the churrera -which comes with nozzles for decorating- and it didn't work out very well) hahaha.
