Eggplant San jacobo with ham and melted cheese

First of all, cut the eggplant into slices (I only did half an eggplant).

Then take a slice of eggplant as a base, put ham and cheese on top and cover it with another slice of eggplant. ⚠️ Try not to let the ham or cheese stick out, cover it all with the eggplant and the batter.

I followed the above procedure with the others

We will take 3 bowls or plates, in one we will put the 2 beaten eggs, in another one oat flakes and in the other one oat flour.

We will start with the breading, we will dip the San Jacobo in the egg, then we will dip it in the oat flour, again in egg and finally in oat flakes.

Continue doing the above procedure with all the San Jacobo you have in the dish.

Preheat air fryer at 180° 4 minutes

Cooking at 170° 18 minutes 10 minutes on one side and 8 minutes on the other side.
