Broccoli and mushroom risotto.

First we heat the vegetable stock. In my case it is broth made with the leftovers (recipe in my profile).

Then we chop the vegetables very well and fry the garlic. Then we fry the rest of the vegetables (first broccoli, then onion and then mushrooms).

Add the rice to the vegetables and sauté for a couple of minutes. Add the wine and mix until the smell of alcohol disappears.

Add the vegetable broth to the rice ladle by ladle and stirring. The broth should remain hot and until it disappears from the rice, do not add more broth.

As the rice cooks, it will become more and more pasty. Once it has the consistency we want, add the Parmesan cheese and mix.
