Caprese salad with homemade pesto

First, we make the pesto: - Mix in a blender -or mortar for the stronger ones- basil, half a clove of garlic, EVOO, salt, pine nuts, cashews and grated grana padano (I put this cheese because I did not find parmesan in the supermarket, but of course it would look great with parmesan). - Go tasting and adjusting, I adjusted the garlic because I like it strong, and I added half a half of the remaining clove.

Cut the tomato and mozzarella into slices.

Assemble the salad: - Salt the tomato and place a slice of tomato/ slice of mozzarella. - On top we add a fine drizzle of EVOO. - To finish, add the pesto

Pd. Maybe adding cashews to pesto seems an aberration to you, like putting chorizo in paella 🙉 but personally I love how it looks, they add creaminess and a crunchy touch, but you can use all pine nuts as in the traditional recipe.
