Cook the sweet potato in the microwave for about 8 minutes at 800W. Once roasted, let it cool a little to peel it and mash it with a fork.

Cut the onion into small squares and fry it with EVOO. Once poached, remove.

In a bowl, mix the beaten eggs, onion and sweet potato puree. Add salt and pepper at this point.

Let it rest for 2 minutes and in the frying pan where we made the onion, put a little EVOO.

Pour the mixture and let it cook for 3-4 minutes (depending on how curdled you want it).

Turn over and repeat the process; but this time let it cook for only 2 minutes.
