Preheat the oven to 180°. In a round silicone mold put 4 whole wheat tortillas that cover all the walls (I have helped me with a plate to fix the shape) and put it in the oven for 10'.

Meanwhile we cut the onion very fine and poach it in a frying pan. When it is done, add the drained spinach and cook for 5 minutes.

In the meantime, mix the eggs, the beaten fresh cheese and the nutmeg and add the mixture made in the frying pan (spinach and onion). Remove the baking pan from the oven, pour our mixture and top with the mushrooms and the cheese of your choice. Bake in the oven at 180° for 25'. Once done, let stand to remove from the mold without breaking and ready!
