Start frying the garlic and onion over low-medium heat with a tablespoon of oil.

Add the bell bell pepper and carrot.

Add the minced meat and mash it with a fork to crumble it until it becomes colored.

Add the crushed tomato, salt and pepper to taste and sauté until reduced.

While the sauce is being made, cut the eggplants into slices and put them in the oven with a little salt and painted with a little oil until they are slightly browned.

Finally we assemble the moussaka putting in a tray a layer of eggplant, a layer of stuffing and some cheese and so on. The number of layers will depend on the size of the tray. On top we put enough cheese and we put it in the oven to gratinate.
