Bring water to a boil and when it comes to a boil, add the quinoa. Cut off the water for 10 minutes and strain in a colander adding cold water to stop the cooking.

While the quinoa is cooking, in a frying pan sauté first the bell pepper, onion and carrot, then add the tofu and then the broccoli. All cut into small pieces.

Once the vegetables and tofu are done, mix with the quinoa and season with salt and pepper. Ready!
