In a saucepan put the water, oil, pinch of salt and vanilla essence. Heat until it comes to a boil. Meanwhile, beat the egg in a plate.

When the saucepan is boiling, turn off the heat and then add the flour, stirring constantly with a whisk. It will be like a lumpy dough, as you work it, it will be looser. Add the beaten egg and continue stirring. It will be like a ball that does not stick to the pan. Let it cool for 10 minutes.

Put the dough in a piping bag and make the churros on a tray with baking paper. Bake in a preheated oven at 180" until golden brown. I had them for about 20 minutes. To make them a little crunchier you can spray them when you put them in the oven with EVOO. Once ready, I added a little stevia on top and accompanied them with a "hot chocolate" (milk or vegetable drink with pure nonfat cocoa). They are really crunchy! Nothing to envy😉
