Cottage cheese pancakes 🥞

Beat the egg in a bowl and add the cottage cheese. Mix the two ingredients well

Add the oat flour and stir until a homogeneous dough is created.

Once we have the dough, we put a drop of EVOO in the pan and spread it around the pan with the help of a piece of paper. Then add some of the batter and wait for our pancakes to brown slightly (I have had 5 mini pancakes, so I estimate that about 3 normal size pancakes).

When we have the pancakes on the plate add the toppings to taste; in my case I put a spoonful of yogurt and banana slices, they are ready to eat! 🤤🍽️
