Peel and slice the artichokes. Put them in a frying pan with a teaspoon of EVOO, salt and cover with the fire at minimum heat. Saut茅 and add the garlic. When it is practically done, uncover it so that it gets a little toasted.

Beat the eggs and make the omelet. I like my omelet to be mellow inside so I make it over medium-high heat to toast 馃檲
