First, we grind 2/3 of the almonds and mix the dry ingredients (ground almonds, oat flour, baking powder and a pinch of salt).

In a bowl beat the egg and mix it with the date paste (soak the dates in water and then beat until you get the paste). I put a teaspoon but each one can put to taste depending on whether you want more or less sweet.

Add the 3 tablespoons of EVOO to the egg with the date paste and the lemon zest. Mix everything well.

Add the mixture to the dry ingredients and mix until everything is well integrated. Chop the remaining almonds and one ounce of chocolate (85% or more) and add it.

We make small balls and put them on baking paper. Flatten with a fork and give them the shape you want. We put them in the oven at 180 degrees for about 10 minutes.

Finally, take them out of the oven and let them cool. Once cooled, they are ready to eat!
