I advise to take the biggest and plumpest male plantains available in the supermarket as they have a better flavor. For this recipe I have used only two male plantains, peel the green peel without removing pieces of plantain itself, when the water is boiling add male plantain cut into slices neither too thin nor too fat, salt to taste (ENOUGH to take flavor) and a pinch of food coloring so that the plantain does not become black.

Let it boil for 10 minutes, so that it feels al dente when you prick it with a fork (you can wait until it is well cooked but this way we avoid insulin spikes and it is more satiating).

After 10 minutes remove and put in a tray (always keep the boiled water in case we need some for the dough) knead the bananas while they are hot, add butter without overdoing it just to soften and chopped cheese (I usually like to use the cheese from Moroccan stores because it is very similar to Latin American cheese) but when I can't find it I use this one which is also tasty and melts.

Form balls the size of your hand and that's it! In my country this is served with fried egg or beef steak. I only eat it with fried egg. They are always eaten hot.

Tips: I used to make these rolls much bigger than the size of my hand and fried instead of boiled, hence the cheese melted, but I found a healthy way to eat them without a guilty conscience. Another tip is that you can make several and keep them in the freezer, the day you want to have them for breakfast put them in the oven and they are golden brown and with the cheese a little melted. The green was just decoration😉 I highly recommend it is one of the favorite breakfasts in my country🤤. For those of you who like to have a light breakfast, bolones can also be used as a midday meal.
