Season the veal with salt and pepper and sear it over high heat with three tablespoons of olive oil. Brown on all sides and set aside.

Chop the onion and garlic into small pieces and sauté in the same pan where the meat has been seared.

Add a glass of red wine and stir until the alcohol evaporates. Then add a liter of meat stock.

Add the thyme and parsley and the reserved meat. I leave it to simmer for 3 hours so that the meat is very tender.
