Quinoa with chickpeas and tofu curry

Prepare the ingredients: chop the onion, cut the tofu into small squares, drain the chickpeas (and rinse them with water) and cook the quinoa (I had already cooked it).

In a frying pan put the chopped onion with 2 tablespoons of EVOO and sauté. When it is golden brown, add the tofu, spices and mix.

To mix the spices better, add a finger of water or white wine (I have added a finger of each for more flavor).

When everything is well integrated, add the chickpeas and quinoa and mix well. If we see that it needs more spices, add more and let it cook so that it takes all the flavor.
