To make the fumet, put the heads and shells of the shrimp in the thermomix with about 400 ml of water. Program 8 minutes at barony temperature, speed 2.5. We reserve the bodies of the shrimps.

Wash the potatoes and cut them into pieces not too small. Peel and chop the onion. Put a little olive oil in the casserole and fry the onion over low heat until it is transparent. Add the tomato and let it fry for a few minutes.

Add the potatoes to the pan and cover with the filtered fumet. Let it cook over low heat for about 20 minutes.

Check that the potatoes are cooked, and if so, add the shrimp bodies and let stand for 5 minutes, with the fire off. Serve sprinkled with chopped fresh parsley.
