Zucchini Lasagna with cottage cheese

First prepare the tomato sauce. Chop the onion, garlic and carrot. Cook everything in a skillet over medium heat for 5 minutes, until soft.

Set the vegetables aside and add the minced meat. Brown the minced meat while stirring the vegetables from time to time.

When the meat is practically cooked, add the tomato and spices to taste (oregano, paprika, etc). Let it reduce for 20-30 minutes.

In the meantime, slice the zucchini into elongated slices using a mandolin. Sear the zucchini in a frying pan over medium-high heat for 1-2 minutes on each side.

Finally, mix the cottage cheese with the beaten egg.

To assemble the lasagna, in a baking dish put a base of sauce and repeat the process of zucchini, sauce and cottage cheese. Finish with zucchini slices and crumbled mozzarella cheese on top.

In a preheated oven at 180°C, broil the lasagna for about 15 minutes.
