Preheat the oven to 170 degrees (with heat up and down).

Add an egg to a bowl and mix it with the sweetener of your choice (I mixed panela with some crushed dates) and then add the EVOO.

Pour the flour (I recommend sifting it) and the oat flakes into the bowl, together with the ingredients already added (in the photo you can only see the flakes because they cover the rest of the ingredients).

Now it is the turn of the vanilla flavoring (optional) and the pure defatted cocoa. If in your case you want to make cookies, chocolate chips, nuts etc.

So that the mixture is not too dry, add a splash of almond drink (or any vegetable drink/milk of your choice) and a little cinnamon powder.

Finally, mix all the ingredients in the bowl to see if you need to add more oats, milk, cocoa or sweetener and when it is to our liking, prepare a baking sheet with parchment paper to start assembling them. The dough should look like this (or with more oatmeal, depending on the amount you have added :)).

Take a spoon and place the dough separately so that they do not stick together (with the baking soda they will grow a little) until the tray is full. Optionally, you can add cashews, chocolate pieces, or any other topping before putting them in the oven.

Bake for about 15-20 minutes (depending on the quantities) and when they are ready, let them cool for another 10-15 minutes.

The texture they have is soft, like cookies and they are great for breakfast, snacks and even for lunch!
