For the nachos: cook the plantain in water for 10 minutes. Drain and mash with the oil, salt and pepper. Knead between two baking papers previously soaked with oil until it is shaped. Bake at 200° for 7 minutes. Remove from the oven, cut into triangles and bake again until crispy.
