Vegan pancakes with blueberries

The first thing we are going to do is to put the aquafaba in a bowl (4 tablespoons are equivalent to 1 egg) and we are going to whisk with high power until it turns into foam and there is no liquid left.

Then we will mash half of the banana with a fork and add it to the aquafaba trying to wrap it well with enveloping movements.

Then add the flour, the peanut powder and a pinch of salt and continue stirring carefully so that the air does not escape. Now add the yeast, milk and lemon and continue stirring. Chop the blueberries (or add them whole, it's up to your taste) and add them integrating them well. You can also add vanilla essence if you like. The batter must be thick, if it is too liquid the pancakes will not rise.

Now add oil or the oil of your choice to a frying pan and pour the pancake batter. IT IS VERY IMPORTANT NOT TO CRUSH THEM, otherwise they will not rise. Cover the pan and wait for the pancakes to bubble, that means they are ready and it is time to flip them.

Once we have our pancakes ready (I had enough for 3 large ones) it's time for the toppings. In my case they were caramelized apple and banana.

What you have to do for the apple is to peel it (or not, to taste too but I like it more peeled) and add it in a pan with cinnamon (to taste) and a little water to cover it so that the apple is tender. Once the apple is tender remove the lid and let it toast, with the sugar of the apple itself will be that crust reminiscent of caramel.

For the plantain simply add a little oil in the pan and cut the plantain into slices. Put it in the frying pan and toast it on both sides.

I also added some peanut butter and some raspberries. And enjoy!!! 😋😋
