- Cut all vegetables into julienne or thin strips.

Put a frying pan or wok on the heat with a drizzle of extra virgin olive oil.

When hot, add all the vegetables and sauté over medium-high heat for 5 minutes. Add a little salt and stir the vegetables continuously.

Meanwhile, in another pan without oil, toast the cashew nuts until golden brown on both sides and set aside.

For the sauce, mix the ingredients: soy sauce or tamari, grated garlic and ginger powder in a glass. Add it to the vegetables and mix well for a couple of minutes.

Serve this chop suey with the cashew nuts on top and chopped chives. You can serve it with brown rice.
