In a saucepan we put the rice to boil. It will be ready in about 10-12 minutes. Meanwhile, chop the leek and eggplant to taste.

In a frying pan, heat a little olive oil and add the leek and eggplant. When they are ready, remove and cook the salmon. Let it cook for about 4 minutes on each side, depending on the thickness of the fillet.

Once the rice is ready, drain it and add it to the vegetables and salmon. Add a little soy sauce to taste.
