First, heat a non-stick frying pan over low heat and add the salmon, previously seasoned with salt and pepper and a little olive oil, and let it cook for about 15-20 minutes depending on its thickness, it should only be cooked on the skin side.

Then cut the mango while the salmon is cooking and add 2/3 of it in a blender with a little water and blend it all, reserving 1/3 for later plating.

Heat the crushed mango in a frying pan and wait for it to thicken for a couple of minutes, stirring from time to time.

We add the salmon to the pan and let it finish cooking for a few minutes, we only need to plate and add chopped chives, a little sesame, freshly ground pepper and add the salmon cut into cubes that we had reserved. Bon appetit!
