Ingredients: - 1 or 2 eggs (as you prefer) - 1 medium banana - 4 tablespoons of oat flour or any other flour - 2 tablespoons Greek yogurt - A splash of milk or vegetable drink - 1/2 teaspoon yeast - Cinnamon to taste - Pinch of salt

VERY IMPORTANT: first of all, separate the egg whites from the yolks and put them in a separate bowl. With a mixer, whip the egg whites until stiff peaks.

In another bowl where you put the egg yolks, put the remaining ingredients. -WITH A WHISKER: simply add the banana in pieces, the flour, the yogurt, a splash of milk, the yeast, the cinnamon and the pinch of salt. And beat it until it is a homogeneous mixture. -WITHOUT A WHISKER: add the mashed banana, the yogurt and the splash of milk to the yolks and mix well. Then, with a sieve, sift the flour, the yeast, the cinnamon and the pinch of salt. Mix everything very well without leaving any lumps. *You can add more milk if the mixture is too thick.

Heat a frying pan with EVOO or coconut oil over medium heat (5-6). When it is very hot add a little of the mixture and let it cook, then turn it over.

And that's it! Decorate them with whatever you like and enjoy! I put some banana, grated coconut, cinnamon and agave syrup.
