Cut potatoes, onion and bell pepper into slices (the bell pepper does not need to be very small pieces).

Put everything in a microwave safe tupper (I used a glass one). Add salt, oil, pepper and stir so that everything is equally impregnated.

Cover with plastic wrap (or if you have a special microwave lid, it's great) and cook for 15 minutes in the microwave at maximum power.

When there are 5 minutes left, cook the eggs in a non-stick frying pan with little or no oil and cover until they are set to taste.

Once the potatoes are finished, serve on a plate with the egg on top and enjoy!
